Cranberry Bliss Bars

Most delicious, flavorful and decedant dessert of the holiday season! You will want to make this one all year long.

Ingredients

Units Scale
  • 3/4 C Salted Butter Softened (11/2 sticks)
  • 1 1/2 C Packed Light Brown Sugar
  • 2 Large Eggs
  • 2 tsp Vanilla
  • 2 1/4 C Flour
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 tsp Ground Cinnamon
  • 1/2 C Dried Cranberries – Chopped
  • 6 oz White Baking Chocolate Chopped Coarsely

Frosting

  • 8 oz Cream Cheese – Room Temperature
  • 1 C Powder Sugar – Sifted
  • 8 oz White Baking Chocolate Melted (reserve 2 oz for drizzle on top)
  • 1/3 C Dried Cranberries, chopped
  • 2 tsp Vanilla (can use clear vanilla)

Instructions

  1. Pre-heat oven to 350°F and prepare a 13×9″ baking pan with butter or non-stick spray.
  2. In a bowl sift to combine flour, baking powder, salt and cinnamon. Set aside.
  3. Melt the butter on the stove top on a medium heat setting, but do NOT boil.
  4. Pour butter into a medium mixing bowl and add the brown sugar. Combine and let sit until the mixture cools to room temperature (about 10 mins).
  5. After sugar mixture is cooled beat in eggs, one at a time and then vanilla.
  6. Gradually add the flour mixture to the butter mixture and combine well, the batter will be thick.
  7. Stir in the chopped white chocolate and chopped cranberries.
  8. Transfer to the prepared pan and spread evenly. I found it best to use my hands because the batter is so thick.
  9. Bake for 15-20 Minutes until tooth pick comes out clean.
  10. Cool completely before adding the frosting.
  11. To make the frosting:
  12. In a bowl, beat cream cheese until creamy. Sift in powered sugar and vanilla. Gradually add 6 oz of the melted white chocolate, beat until blended.
  13. Frost the bars and sprinkle cranberries and drizzle white chocolate over top and ENJOY!
